How to make Kitchari.
Kitchari Recipe
Ingredients: For 1 Serving.
80 grams of Simply Kitchari Mix
1 tablespoon Simply Kitchari Spice Mix*
2 tablespoons ghee/ Coconut oil
6 cups water
1–2 cups chopped vegetables (optional)
Directions:
Take 80 grams of the Simply Kitchari rice and lentil mix in a large bowl and wash several times in water. After washing, allow the mixture to soak for at least half an hour.
In a medium saucepan warm the ghee or coconut oil. Add the Simply Kitchari Spice Mix and sauté for one to two minutes. Add the drained rice and lentil mix and sauté for another couple of minutes. Then add 6 cups of water and bring to a boil.
Once the kitchari has come to a boil reduce the heat to medium-low. Cover and cook until it is tender (approx. 30–45 minutes).
If you are adding vegetables to your kitchari, add the longer cooking vegetables, such as carrots and cauliflower, halfway through the cooking. Add the vegetables that cook faster, such as leafy greens, near the end.
Add more water if needed. The kitchari should be the consistency of a porridge or risotto. You may prefer the thinner consistency for easier digestion.The kitchari will thicken when it cools and so you may need to add more water for the consistency that you require.
Optional garnishes and spice additions:
Fresh cilantro
Lime
Salt to taste (optional).
